you do see plenty of arty in SW, just not in the films.  Im sure many of you have read at least some of the many hundreds of novels in the expanded universe and the battles go pretty much like a battle today or in recent past.  Arty in the form of (orbital strike from orbiting ships) then a d combined infantry and armour attack.  Id like to see it but  please be sesible lol
