I thought it was grey floor with giant blocky models on top of it and the trench was like 1-2 repeating models or something.

Actually, there weren't any interceptors at the trench run. They weren't invented.

Although the interceptor only made its appearance in Return of the Jedi, the Star Wars Sourcebook  has stated that the interceptor existed at the time of the Battle of Yavin, where an Imperial Star Destroyer's six TIE squadrons consisted of:
-four squadrons of standard TIE fighters
-one squadron of TIE bombers
-one of TIE interceptors.
By the Battle of Endor, an additional squadron of interceptors replaced one of the TIE fighter squadrons. The interceptor's absence from A New Hope and The Empire Strikes Back was perhaps due to design limitations.

The source book for the card game, and some games date the int as pre-ANH. Despite the movies (and books I believe) evidence to the contrary.

Unfortunately, as convenient as having a pre-ANH int would be, it seems unlikely in canon, due to the obvious question of why the death star, and Darth Vader's fleet in ESB, would not have been equiped with them, or used them.

In development, almost certainly. In canon use - extremely unlikely.

Unfortunately, you just proved me right. If they were not tested, they would not be in the fleet. And logically, the most important units would have received them first - and we have direct G-Canon evidence they didn't have them at that point.
