I dunno, I'm gonna watch episode V on DVD tonight, but I think those speeders had pretty good manueverability.  They were pulling some crazy moves in the movie.  On the speed issue, they were pretty fast in the movies as wel.  And as far as the sensitivity goes, if you don't like the fast response, you can just hold off a bit on the throttle, go a little slower.
