Yeah, this would make for a cool map. You could have a modified version of a VSD on a map and it would have ramps on the bottom for the deployment of AT-STs, speeder bikes, AT-ATs, repulsor tanks and other vehicles. But you would have to have the ramps and landing gear tall enough so that fighters can take off from the hanger if you plan to include one that still has the hanger on the bottom. But it would be cool to to do a re-enactment of the Ghorman Massacre.
Most troop drops are handled by Drop ship though. The amount of time and effort to get a Capital ship of that size (VSD, ISD, SSD - whatever) into the atmosphere spoils the element of surprise - not to mention that you'd want the Star Destroyer in Low Orbit for interdiction duties. The Imperials tended to use the Landing Brick to drop their contingents of troops and other larger drop ships to drop ATATs and ATSTs. It was much faster, and didn't leave the capital ships open to attack from atmospheric fighters / speeders.. Most drop ships entered a planet's atmosphere at such a high rate of speed that very few atmospheric fighters could touch them, and these drop ships were more than able to handle themselves, easily clearing out the drop zones with heavy blasters and turbolasers so that their troops could disembark relatively unscathed.
And just a quick note, the Imperial I class ISD was capable of entering the atmosphere to support troops - the Imperial II class ISD was not..
