From a newbie, how exactly would you retract the wings halfway? Do you toggle between "S" and "W" or am I missing something completely? I thought holding down "S" they are retracted and as soon as you hit "W" they start unfolding.

Yup. You hold down Reverse to make the wings start to retract, then when they're retracted far enough, you glide until you're clear and engage forward throttle again.

It's all about practice. As Twigs said, train offline. There's training videos on YouTube, too, if you search for them (Lambda tutorial).
