Qui-Gon & Obi-Wan vs. Maul easily.

From the way the two Jedi run into Maul, with his grand entrance, to the great visuals of the Naboo Reactor Power Chambers thingie, it's just tops.  Plus John Williams score for that sequence is amazing.  Probably the best musical cue of the entire Star Wars epic is the flourish of music when Qui Gon is cut down unexpectedly by Maul.  Just makes me shiver everytime I hear it.

Though it is EXTREMELY short, General Grievous Vs. Obi-Wan Kenobi is the best (if it was only longer *sob*).

Great fighting and dialogue and it didn't rely heavily on fancy effects to mask the bad acting of pre ep. 4 tongue

Whoa there mister, save for Natalie Portman, the acting was only bad in Episode 2.
