One problem I'd have with the one man Y-wing as you said it makes the bombing targeting alot harder to both operate the bombs and guns. It would probably be better in my opinion to have the bombers as a two man viehcle, it also means the Y-wing has more of a chance on picking up on followers in boming runs, this allows both pilots to set their minds on their specific jobs.
