Well we can't really lol because after we release the first release, our ideas on how to do the Jedi/Sith might change. We are not certain on how to do it yet.

Obi-Wan was in most of episode 4, and in 5 and some of 6 there was Yoda.

Obi Wan just fought with Darth Vader, but just lived on Tatooine, that's all, and Yoda just lived on Dagobah

Leia fought and she turned out to be a Jedi in the EU.  She didn't fight as a Jedi though.
