No more copyrighted than "Hoth" or "Death Star". While, in an artistic sense, I personally think the MF was a character in its own right -- it wasn't technically a character.
I would feel bad if there were no Millennium Falcon in the game. A generic YT-1300 freighter for maps where the Falcon might not actually make sense to be, but where it was in the films, I'm all for it. 
I could rarely fly the thing in GC, myself, and it was nigh-impossible to control Slave I, which is why it was never 'scary'. If controls were made remotely usable, either could be a nice addition, where appropriate.
And I can't even see to fly/gun in some of these vehicles, to be honest. Maybe if the HUDs for gunner positions followed crosshair transparency rules, or if the cockpits didn't take up so much screen space... They're nice, and the more detail, the better. But when I'm in combat, I'd rather see the enemy than a bunch of pretty lights and 'controls'. The actual game play is what I find fun. So, make me take an extra split-second to change views. I don't care. But don't limit me to 25-33% of my screen for the action.
