As mentioned, Lucas modelled things after WW2 dogfights. It makes for interesting battle scenes and was probably easier to produce on a budget with the effects of the time. If it bothers you that much, think of it this way. The tech in the Star Wars universe is far ahead of our own, inertial compensators etc probably make the handling of these craft more akin to atmospheric flights so that pilots do not have to adjust between the characteristics when transiting between space and planet surface. Well, it makes some sort of excuse ;P

Even in the new BSG the show creators admit that while they try to make effects as close to true (well, known) physics as possible, it can't always be done if they want to keep the entertainment factor. So while it looks good and certainly appears realistic there are 'bloopers' there too.

This is not nessicarily true. Both on the quantum (super small) and super large scales the nature of Gravity is still baffiling physists. Hell we don't even know what gravity really is! Newton says its an attractive FORCE but Eistien says its the 'bending' of space time by a mass!

But in anycase gravity exerts an incredibly small force on an object, so much that it takes incredibly large mass acting on a small mass to even produce a Newton of Force! Therefore such technicalities like you mention are entirely ignored by the scietific community. In most cases Space offers an entirely Zero-G environment!

Yes, Starwars physics is entirely different, it's far more cinematic. Which is entirely understandable.

The average human cannot handle more than 6 g's. Trained pilots can take 9-10 g's. That is the limiting factor.
