Remember all of the star wars movies? These things flew by at hair raising speed. That's what made the dog fights so fun. Transfer theory into practice and you have a perfect mod. 
Oh ya! 1 more thing - when regular lasers zip by, I don't hear anything. Where is the "zzzing?" I'm hearing a sound when the "ion missiles" (we'll call them that) zing by, but not when regular lasers are fired. This would give those dogfights that extra tingle when you hear those things zipping past you.

Actuallly, this point has been brought up countless times, but you are right. The craft are much slower than their film counterparts (try zooming by a few stationary frigates and transports at max speed with boost). But like it's been said before, there are several factors as to why. Hit detection would be a major problem with the game's engine (it's already quite dificult), map size and serious lag are a few heavy hitters.
Artificial intelligence is no match for natural stupidity.
